Back-to-School Lunch Ideas

Schools are starting up this week. In light of the Covid pandemic, many may choose to pack a lunch for their kids to take to school. Here are some ideas for packing a tasty, yet nutritional lunch.

Fruity Peanut Butter Pitas

1/4 c. peanut butter (or almond butter)

1/8 tsp. each ground allspice, cinnamon, & nutmeg

2 whole wheat pita pocket halves

1/2 med. apple, thinly sliced

1/2 med. firm banana, sliced

 

In a small bowl, blend the peanut butter, allspice, cinnamon, and nutmeg. Spread inside pita bread halves; fill with apple and banana slices. 2 servings

 


Mini Lunchbox Pizzas 

King’s Hawaiian Original Dinner Rolls

Pizza Sauce

Shredded mozzarella cheese

Pepperoni (optional)

 

Preheat oven at 350°F.

First, slice the King’s Hawaiian Original Dinner Rolls in half and place on a cookie sheet with the crust facing down.

Next, spread a spoonful of pizza sauce on each dinner roll half and top with shredded cheese. If desired, add a piece of pepperoni to top of each mini pizza.

Once your pizzas are assembled, place them in the oven for 15 minutes to crisp up the bread and melt the cheese. Remove them from the oven and let them cool off. Once cool, properly wrap or store in lunch containers, add the mini pizzas to your lunch box.

 


Pizza Wraps

1 pkg. (8 oz.) sliced pepperoni

4 flour tortillas (8”), room temperature

1/2 c. chopped tomatoes, de-seeded if taken in lunch box

1/4 c. each chopped sweet onion, chopped fresh mushrooms, & chopped ripe olives

1/4 c. chopped green pepper, optional

1 c. shredded part-skim mozzarella cheese

 

Arrange pepperoni off center on each tortilla. Top with remaining ingredients. Fold sides and bottom over filling and roll up. 4 wraps

 


Spinach and Turkey Pinwheels

1 carton (8 oz.) spreadable garden vegetable cream cheese, or plain

8 flour tortillas (8”)

4 c. fresh baby spinach

1 lb. sliced deli turkey

 

Spread cream cheese over tortillas. Layer with spinach and turkey. Roll up tightly; if not serving immediately, wrap and refrigerate. To serve, cut rolls crosswise into 1-in. slices. 8 servings

 


Wheely-Good Pasta Salad

1 pkg. (16 oz.) wagon wheel pasta

8 oz. cheddar cheese, cut into small cubes

1 med. sweet red pepper, diced

1 can (3.8 oz.) sliced ripe olives, drained

2 tsp. minced fresh oregano

1 bottle (16 oz.) creamy Parmesan Romano salad dressing

 

Cook pasta according to package directions; drain and rinse in cold water. In a large serving bowl, combine the pasta, cheese, red pepper, olives and oregano. Drizzle with dressing and toss to coat. Cover and refrigerate until serving. 12 servings Note: Can add 1 cup cooked, cubed chicken or ham for protein.
